Offerings to include espresso, brunch and Friday fish fry

Pancakes, sandwiches on homemade bread and espresso are just some of the likely menu items at Byron's newest restaurant, expected to open soon.

On Feb. 11, the city council approved a conditional use permit for "Terry's Diner on the Tracks," to be located at 309 Byron Ave.

The business will be run by Terry Pfister, who has lived in Byron the past two years and who said she's always wanted to open a restaurant.

""I just like to cook," said Pfister, who's also a local property manager.

The diner is expected to be open seven days a week for breakfast and lunch. Hours will be 6 a.m. to 2 p.m. Saturday through Thursday, with Friday open 6 a.m. to 10 p.m. and offering a fish fry.

According to the permit, seating in the facility, which last housed a Mexican restaurant several years ago, is listed at 40, with an estimated four employees.

Pfister, 57, said she is leasing the building and that she hopes to open as soon as she puts some finishing touches on the business and receives her license through the state.

Her goal date is mid-March.

"I think having another business in town is good," council member Jason Snow said.

Pfister said she will offer traditional diner fare, hopes to offer Sunday brunch and of course will offer regular coffee in addition to espresso.

As for desserts?

"Homemade pie," she said. "My best pie to make is apple."
